Instructions
- Preheat oven to 250°F (120°C). Line a baking sheet with parchment paper and draw a 9-inch circle on it.
- In a clean bowl, beat egg whites until soft peaks form. Gradually add caster sugar, beating until stiff and glossy.
- Gently fold in vanilla extract, vinegar, and cornstarch.
- Spread meringue mixture onto the prepared circle, smoothing the top and sides.
- Bake for 1 hour and 15 minutes until crisp. Turn off oven and let meringue cool inside with door slightly open.
- Whip heavy cream with powdered sugar until soft peaks form.
- Once cool, top the meringue with whipped cream and arrange fresh fruits on top.
