- 1 prepared pizza dough
- 2 large yellow onions, sliced thin
- 2 tablespoons olive oil
- 1 teaspoon sugar
- 2 cups shredded Gruyere or Swiss cheese
- 1/4 cup chopped fresh thyme
- Salt and freshly ground black pepper to taste
- Fresh parsley for garnish
Instructions
- Preheat oven to 450°F (230°C).
- Caramelize onions: In a skillet, heat olive oil over medium heat. Add sliced onions and sugar, cook slowly for about 30 minutes until golden and soft, stirring occasionally.
- Roll out pizza dough on a floured surface to your preferred thickness. Transfer to a baking sheet or pizza stone.
- Spread caramelized onions evenly over the dough.
- Sprinkle generously with shredded cheese and fresh thyme.
- Bake in the oven for 12-15 minutes until the crust is golden and cheese is bubbly.
- Garnish with chopped parsley before serving. Slice and enjoy!

- For extra flavor, add a splash of sherry or balsamic vinegar during onion caramelization.
