- 2 lbs beef chuck, cut into cubes
- 2 tablespoons vegetable oil
- 1 large onion, chopped
- 3 cloves garlic, minced
- 2 tablespoons paprika powder
- 1 teaspoon caraway seeds
- 1 can diced tomatoes (14 oz)
- 3 cups beef broth
- 2 carrots, sliced
- 2 potatoes, cubed
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Heat oil in a large pot over medium-high heat. Brown the beef cubes until all sides are golden. Remove and set aside.
- In the same pot, sauté onions until translucent. Add garlic and cook for another minute.
- Stir in paprika powder and caraway seeds. Cook for 1 minute to release aromas.
- Return beef to the pot, add diced tomatoes, beef broth, carrots, potatoes, salt, and pepper. Bring to a boil.
- Reduce heat to low, cover, and simmer for about 2 hours until beef is tender and flavors meld.
- Garnish with fresh parsley before serving. Serve hot with crusty bread or noodles.
Notes
- For additional depth, add a splash of red wine during cooking.
- Adjust the paprika quantity for milder or spicier flavor.
- Goulash tastes even better the next day as flavors deepen.
