  • 2 lbs beef chuck, cut into cubes
  • 2 tablespoons vegetable oil
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 2 tablespoons paprika powder
  • 1 teaspoon caraway seeds
  • 1 can diced tomatoes (14 oz)
  • 3 cups beef broth
  • 2 carrots, sliced
  • 2 potatoes, cubed
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Heat oil in a large pot over medium-high heat. Brown the beef cubes until all sides are golden. Remove and set aside.
  2. In the same pot, sauté onions until translucent. Add garlic and cook for another minute.
  3. Stir in paprika powder and caraway seeds. Cook for 1 minute to release aromas.
  4. Return beef to the pot, add diced tomatoes, beef broth, carrots, potatoes, salt, and pepper. Bring to a boil.
  5. Reduce heat to low, cover, and simmer for about 2 hours until beef is tender and flavors meld.
  6. Garnish with fresh parsley before serving. Serve hot with crusty bread or noodles.
