Instructions
- Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
- In a large bowl, cream together butter and sugar until light and fluffy.
- Beat in egg and vanilla extract.
- In a separate bowl, whisk together flour, baking soda, cinnamon, and salt.
- Gradually add dry ingredients to wet, mixing until just combined.
- Fold in chopped apples.
- In a small bowl, mix sugar and cinnamon for coating.
- Form dough into 1.5-inch balls and roll them in cinnamon sugar mixture.
- Place on prepared baking sheets and flatten slightly.
- Bake for 10-12 minutes until edges are golden brown.
- Cool on wire racks before serving.
