  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt

Instructions

  1. Preheat oven to 350°F (175°C). Line a 9×13-inch baking pan with parchment paper.
  2. In a large bowl, whisk together flour, cinnamon, nutmeg, baking powder, baking soda, and salt.
  3. In another bowl, beat eggs, granulated sugar, brown sugar, vegetable oil, and vanilla until smooth.
  4. Gradually add dry ingredients to the wet mixture, mixing just until combined. Fold in grated carrots.
  5. Pour batter into the prepared pan and bake for 35-40 minutes, or until a toothpick inserted into the center comes out clean.
  6. Allow the cake to cool completely before frosting.
  7. Spread cream cheese frosting evenly over cooled cake and sprinkle chopped walnuts on top. Slice into bars and serve.
