- 2 cups grated carrots
- 1 1/2 cups all-purpose flour
- 1 cup granulated sugar
- 1/2 cup brown sugar
- 1/2 cup vegetable oil
- 4 large eggs
- 1 teaspoon vanilla extract

- 1/2 teaspoon ground nutmeg
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
Instructions
- Preheat oven to 350°F (175°C). Line a 9×13-inch baking pan with parchment paper.
- In a large bowl, whisk together flour, cinnamon, nutmeg, baking powder, baking soda, and salt.
- In another bowl, beat eggs, granulated sugar, brown sugar, vegetable oil, and vanilla until smooth.
- Gradually add dry ingredients to the wet mixture, mixing just until combined. Fold in grated carrots.
- Pour batter into the prepared pan and bake for 35-40 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the cake to cool completely before frosting.
- Spread cream cheese frosting evenly over cooled cake and sprinkle chopped walnuts on top. Slice into bars and serve.
