- 1 pound boneless, skinless chicken breasts
- 1 (20 oz) package cheese tortellini
- 4 cups chicken broth
- 1 cup heavy cream
- 2 cloves garlic, minced
- 1 teaspoon Italian seasoning
- 1/2 teaspoon red pepper flakes (optional)
- 1 cup grated Parmesan cheese
- Fresh basil for garnish
Instructions
- Place chicken breasts in the slow cooker and pour chicken broth over them.
- Cook on low for 6 hours or high for 3 hours until chicken is tender.
- Remove chicken and shred with two forks, then return to the slow cooker.
- Add minced garlic, Italian seasoning, and red pepper flakes; stir well.
- Add heavy cream and tortellini, cooking on high for 20 minutes until tortellini is tender.
- Stir in Parmesan cheese and garnish with fresh basil before serving.
Notes
- You can substitute cooked, shredded chicken for rotisserie chicken for convenience.
- For a gluten-free version, use gluten-free tortellini.
- Adjust seasoning to taste, adding more herbs or spice as desired.
