Ingredients

  • 1 cup sun-dried tomatoes in oil, drained and chopped
  • 2 cups fresh spinach
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Fresh basil for garnish

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Season chicken breasts with salt, pepper, and Italian seasoning. Cook until golden and cooked through, about 6-7 minutes per side. Remove and set aside.
  3. In the same skillet, add minced garlic and cook until fragrant, about 1 minute.
  4. Add sun-dried tomatoes and cook for another 2 minutes.
  5. Pour in heavy cream, stirring to combine. Bring to a simmer.
  6. Stir in Parmesan cheese until melted and sauce thickens slightly.
  7. Add fresh spinach and cook until wilted, about 2 minutes.
  8. Return chicken to the skillet and spoon sauce over. Simmer for 3-4 minutes to meld flavors.
  9. Garnish with fresh basil and serve hot.
