- 4 chicken breasts
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 cup sun-dried tomatoes in oil, drained and chopped
- 2 cups fresh spinach
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- Fresh basil for garnish
Instructions
- Heat olive oil in a large skillet over medium heat.
- Season chicken breasts with salt, pepper, and Italian seasoning. Cook until golden and cooked through, about 6-7 minutes per side. Remove and set aside.
- In the same skillet, add minced garlic and cook until fragrant, about 1 minute.
- Add sun-dried tomatoes and cook for another 2 minutes.
- Pour in heavy cream, stirring to combine. Bring to a simmer.
- Stir in Parmesan cheese until melted and sauce thickens slightly.
- Add fresh spinach and cook until wilted, about 2 minutes.
- Return chicken to the skillet and spoon sauce over. Simmer for 3-4 minutes to meld flavors.
- Garnish with fresh basil and serve hot.
Notes
- You can substitute heavy cream with Greek yogurt for a lighter version.
- For added flavor, sprinkle with crushed red pepper flakes.
