- 1 tablespoon olive oil
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 4 cups chicken broth
- 2 cups cooked rotisserie chicken, shredded
- 1 package (16 oz) potato gnocchi
- 1 cup heavy cream
- 1 teaspoon thyme
- Salt and pepper to taste
- Fresh parsley, chopped for garnish
Instructions
- Heat olive oil in a large pot over medium heat. Add chopped onion and cook until translucent.
- Stir in minced garlic and cook for 1 minute until fragrant.
- Add chicken broth and bring to a boil.
- Once boiling, add shredded rotisserie chicken and potato gnocchi. Cook according to package instructions, usually about 3-5 minutes.
- Reduce heat to low and stir in heavy cream and thyme. Season with salt and pepper.
- Simmer for an additional 5 minutes to allow flavors to meld.
- Serve hot, garnished with fresh parsley.
Notes
- Use store-bought rotisserie chicken for quick preparation.
- Gnocchi will swell and become tender; do not overcook.
- For a gluten-free version, opt for gluten-free gnocchi.
