- 1 pound store-bought gnocchi
- 2 cups fresh spinach, chopped
- 1/2 cup pesto sauce
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 1/2 cup heavy cream
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- Preheat oven to 400°F (200°C). Grease a baking dish.
- Cook gnocchi according to package instructions, drain and set aside.
- In a large skillet, heat olive oil and sauté spinach until wilted. Remove from heat.
- In a bowl, mix pesto, heavy cream, salt, and pepper. Combine with cooked gnocchi and spinach.
- Transfer the mixture to the prepared baking dish.
- Sprinkle mozzarella and Parmesan cheese evenly over the top.
- Bake for 20-25 minutes until bubbly and golden on top.
- Serve hot, garnished with fresh basil if desired.
Notes
- Feel free to add cooked chicken or mushrooms for extra protein.
- You can substitute fresh spinach with kale or arugula.
