  • 1 pound store-bought gnocchi
  • 2 cups fresh spinach, chopped
  • 1/2 cup pesto sauce
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup heavy cream
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C). Grease a baking dish.
  2. Cook gnocchi according to package instructions, drain and set aside.
  3. In a large skillet, heat olive oil and sauté spinach until wilted. Remove from heat.
  4. In a bowl, mix pesto, heavy cream, salt, and pepper. Combine with cooked gnocchi and spinach.
  5. Transfer the mixture to the prepared baking dish.
  6. Sprinkle mozzarella and Parmesan cheese evenly over the top.
  7. Bake for 20-25 minutes until bubbly and golden on top.
