- 4 boneless chicken breasts
- 1 cup chopped mushrooms
- 2 cloves garlic, minced
- 1/2 cup shredded cheese (cheddar or mozzarella)
- 2 tablespoons olive oil

Instructions
- Preheat oven to 375°F (190°C).
- Cut a pocket into each chicken breast, being careful not to cut all the way through.
- In a skillet, sauté mushrooms and garlic in olive oil until tender.
- Stuff the mushroom mixture into each chicken pocket, then sprinkle with shredded cheese.
- Secure with toothpicks if needed, season with salt and pepper.
- Bake in the preheated oven for 25-30 minutes until cooked through and golden brown.
- Garnish with fresh parsley and serve hot.
