- 1 pound Italian sausage, sliced or crumbled
- 1 package (16 oz) potato gnocchi
- 4 cups chicken broth
- 1 cup heavy cream
- 2 cups fresh spinach, chopped
- 1 small onion, diced
- 3 cloves garlic, minced
- 1 tablespoon olive oil
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- Grated Parmesan cheese for garnish
Instructions
- Heat olive oil in a large pot over medium heat. Add onion and garlic, sauté until fragrant.
- Add Italian sausage and cook until browned. Drain excess fat if necessary.
- Pour in chicken broth and bring to a boil.
- Add gnocchi and cook according to package instructions until tender.
- Reduce heat to low, stir in heavy cream and Italian seasoning, simmer for 5 minutes.
- Add chopped spinach, cook until wilted.
- Season with salt and pepper, then serve garnished with Parmesan cheese.
Notes
- You can substitute spicy Italian sausage for added heat.
- For a gluten-free version, use gluten-free gnocchi and broth.
