Ingredients

  • 1 pound Italian sausage, crumbled
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 (16 ounce) package refrigerated gnocchi
  • 1 cup heavy cream
  • 2 cups fresh spinach, chopped
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Olive oil

Instructions

  1. In a large pot, heat olive oil over medium heat. Add crumbled Italian sausage and cook until browned. Remove and set aside.
  2. In the same pot, sauté chopped onion and minced garlic until translucent.
  3. Pour in chicken broth and bring to a boil. Add the gnocchi and cook until tender, about 3-4 minutes.
  4. Stir in heavy cream, cooked sausage, Italian seasoning, salt, and pepper. Simmer for 5 minutes.
  5. Add chopped spinach and cook until wilted. Serve hot garnished with fresh herbs.
