- 1 pound Italian sausage, crumbled
- 1 onion, chopped
- 3 cloves garlic, minced
- 4 cups chicken broth
- 1 (16 ounce) package refrigerated gnocchi
- 1 cup heavy cream
- 2 cups fresh spinach, chopped
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- Olive oil
Instructions
- In a large pot, heat olive oil over medium heat. Add crumbled Italian sausage and cook until browned. Remove and set aside.
- In the same pot, sauté chopped onion and minced garlic until translucent.
- Pour in chicken broth and bring to a boil. Add the gnocchi and cook until tender, about 3-4 minutes.
- Stir in heavy cream, cooked sausage, Italian seasoning, salt, and pepper. Simmer for 5 minutes.
- Add chopped spinach and cook until wilted. Serve hot garnished with fresh herbs.
Notes
- Replace heavy cream with half-and-half for a lighter version.
- For spicier flavor, add red pepper flakes.
- This soup stores well in the fridge for up to 2 days.
