Instructions
- Preheat oven to 400°F (200°C).
- Season chicken breasts with salt, pepper, and Italian seasoning.
- Heat olive oil in a skillet over medium-high heat. Sear chicken until golden brown on both sides, about 3-4 minutes per side.
- Mix garlic and Parmesan cheese. Coat the chicken with the mixture.
- Place chicken on a baking sheet. Roast in the oven for 20-25 minutes until cooked through.
- Meanwhile, boil diced potatoes until tender, about 15 minutes. Drain and stir in butter, salt, and pepper.
