- 1.5 pounds beef sirloin or stew meat, cut into bite-sized pieces
- 4 cloves garlic, minced
- 3 tablespoons unsalted butter
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon dried thyme or rosemary (optional)
- Fresh parsley, chopped (for garnish)
Instructions
- Heat olive oil in a skillet over medium-high heat. Add beef pieces and sear until browned on all sides. Transfer to slow cooker.
- In the same skillet, melt butter and sauté garlic until fragrant, about 1 minute. Pour over beef in slow cooker.
- Add salt, pepper, and herbs if using. Cover and cook on low for 6-8 hours, until beef is tender.
- Garnish with chopped parsley before serving. Serve with your favorite side dishes.
Notes
- You can add vegetables like mushrooms or green beans during the last 30 minutes of cooking for extra flavor and nutrition.
- Serve over cauliflower rice, mashed potatoes, or a fresh salad.
