- 4 large russet potatoes, thinly sliced
- 2 large onions, sliced
- 2 tablespoons butter
- 1 tablespoon olive oil
- 2 cups shredded Gruyere or Swiss cheese
- 1/2 cup grated Parmesan cheese
- 1 teaspoon thyme
- Salt and pepper to taste
- Fresh herbs for garnish
Instructions
- Preheat oven to 375°F (190°C). Grease a baking dish.
- In a skillet, heat butter and olive oil over medium heat. Add onions and cook until caramelized, about 15 minutes. Season with salt, pepper, and thyme.
- Layer half of the sliced potatoes in the baking dish. Spread half of the caramelized onions over the potatoes. Repeat layers.
- Top with shredded cheese and Parmesan. Cover with foil.
- Bake for 45 minutes. Remove foil and bake another 15 minutes until golden and bubbly.
- Garnish with fresh herbs before serving.

- For a vegan version, substitute cheese with plant-based cheese and use vegan butter.
- Ensure potatoes are sliced evenly for consistent cooking.
