- 4 large potatoes, peeled and diced
- 1 onion, chopped
- 3 cloves garlic, minced
- 4 cups chicken or vegetable broth
- 1 cup milk or heavy cream
- 1 cup shredded cheddar cheese
- 4 slices bacon, cooked and crumbled
- 2 green onions, sliced
- Salt and pepper to taste
Instructions
- Add potatoes, onion, garlic, and broth to the crockpot. Cover and cook on low for 6-8 hours or high for 3-4 hours until potatoes are tender.
- Use a potato masher or immersion blender to mash or blend the soup until smooth or slightly chunky, as preferred.
- Stir in milk or heavy cream and shredded cheese until melted and creamy.
- Season with salt and pepper to taste.
- Serve hot, garnished with bacon pieces and chopped green onions.
Notes
- For a thicker soup, add more potatoes or reduce the milk.
- Feel free to add chopped ham or cooked chicken for extra protein.
