- 1 lb (450g) boneless, skinless chicken breasts or thighs, diced
- 1 ½ cups long-grain rice
- 2 cups chicken broth
- 1 cup heavy cream or full-fat coconut milk
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 1 cup grated Parmesan cheese
- 2 tablespoons olive oil or butter
- 1 teaspoon paprika (optional)
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Heat 1 tablespoon of olive oil or butter in a large skillet over medium-high heat. Season the diced chicken with salt, pepper, and paprika if using. Sear the chicken until golden brown and cooked through, about 5-7 minutes. Remove from the pan and set aside.
- In the same skillet, add chopped onion and cook until translucent, about 3-4 minutes. Add minced garlic and cook for 30 seconds until fragrant.
- Add rice to the skillet and cook, stirring frequently, for 2-3 minutes to develop flavor.
- Pour in chicken broth and bring to a boil. Reduce heat to low, cover, and simmer for 15 minutes or until rice is tender and liquid is absorbed.
- Remove from heat. Stir in heavy cream (or coconut milk) and Parmesan cheese until smooth. Return cooked chicken to the skillet and stir to combine. Adjust seasoning with salt and pepper if needed.
- Serve hot, garnished with chopped parsley. Pair with vegetables or a salad for a complete meal.

- Can substitute heavy cream with Greek yogurt or coconut milk for a lighter option.
- If using a slow cooker, combine all ingredients and cook on low for 4-6 hours, adding cheese and cream at the end.
- For added flavor, incorporate vegetables like spinach, mushrooms, or peas.
