- 4 slices bacon, diced
- 1 lb cooked chicken, shredded
- 1 package (16 oz) gnocchi
- 4 cups chicken broth
- 1 cup heavy cream
- 1 small onion, chopped
- 2 cloves garlic, minced
- 2 tbsp butter
- Salt and pepper to taste
- Fresh parsley and grated Parmesan for garnish
Instructions
- Cook bacon in a large pot until crispy, then remove and set aside.
- In the same pot, sauté onion and garlic in bacon drippings and butter until translucent.
- Add chicken broth and bring to a boil.
- Stir in gnocchi and cook until they rise to the surface, about 3-4 minutes.
- Reduce heat and add heavy cream, shredded chicken, and cooked bacon. Simmer for 5 minutes.
- Season with salt and pepper. Garnish with parsley and Parmesan before serving.
Notes
- Use good quality gnocchi for a fluffier texture.
- Feel free to add spinach or mushrooms for extra flavor.
- Make it dairy-free by substituting non-dairy cream.
