- 2 cups cooked chicken, shredded
- 1 ripe avocado, sliced
- 4 slices of sandwich bread
- 1 cup shredded cheese (cheddar or mozzarella)
- 2 tablespoons mayonnaise
- 1 teaspoon Dijon mustard
- 1 tablespoon butter, for toasting
- Salt and pepper, to taste
Instructions
- Mix mayonnaise, Dijon mustard, salt, and pepper in a bowl to make a spread.
- Spread the mixture evenly on one side of each bread slice.
- Layer shredded chicken and sliced avocado on two bread slices.
- Sprinkle shredded cheese over the fillings.
- Top with the remaining bread slices, spread side down.
- Butter the outsides of the sandwiches.
- Grill in a skillet over medium heat until bread is golden brown and cheese is melted, about 3-4 minutes per side.
