Instructions
- Preheat oven to 400°F (200°C) and line a baking sheet.
- In a bowl, toss potatoes with olive oil, garlic powder, smoked paprika, salt, and pepper.
- Spread potatoes onto the baking sheet and roast for 25-30 minutes until tender and crispy.
- In a large bowl, combine roasted potatoes, smoked sausage slices, ranch dressing, and cheddar cheese.
- Transfer to a baking dish, top with extra cheese if desired, and bake for an additional 10 minutes until bubbly.
- Garnish with fresh parsley before serving.
