- 1 tablespoon olive oil
- 4 slices bacon, chopped
- 1 medium onion, diced
- 2 cloves garlic, minced
- 4 cups chicken broth
- 1 cup heavy cream
- 1 pound potato gnocchi
- 1 cup shredded cheddar cheese
- Salt and pepper to taste
- Fresh chives or parsley for garnish
Instructions
- In a large pot, cook chopped bacon until crispy. Remove and set aside.
- In the same pot, add olive oil and sauté diced onion and garlic until fragrant and translucent.
- Pour in chicken broth and bring to a boil. Add gnocchi and cook until tender, about 3-5 minutes.
- Reduce heat and stir in heavy cream and cheddar cheese until melted and smooth.
- Season with salt and pepper. Top with crispy bacon bits and fresh herbs before serving.
Notes
- You can substitute shredded mozzarella for cheddar for a milder flavor.
- For extra protein, add cooked sausage or chicken slices.
- To make it gluten-free, use gluten-free gnocchi.
