- 4 slices bacon, chopped
- 1 cup shredded cheddar cheese
- 16 oz gnocchi
- 4 cups chicken broth
- 1 cup heavy cream
- 1 small onion, diced
- 2 cloves garlic, minced
- Salt and pepper to taste
- Chopped fresh chives or parsley for garnish
Instructions
- In a large pot, cook bacon over medium heat until crispy. Remove and set aside.
- In the same pot, sauté onion and garlic until translucent.
- Add chicken broth and bring to a boil.
- Stir in gnocchi and cook until tender, about 3-4 minutes.
- Reduce heat to low, stir in heavy cream and cheddar cheese until melted and smooth.
- Season with salt and pepper. Top with crispy bacon and herbs before serving.
Notes
For a healthier option, use turkey bacon or reduce the cheese amount. For extra flavor, add a dash of smoked paprika or chopped jalapenos.
