Instructions
- Toast the bread slices until golden brown.
- Cut and mash the avocados in a bowl, season with salt, pepper, and a squeeze of lemon juice if desired.
- Spread the mashed avocado evenly over the toasted bread slices.
- Top with halved cherry tomatoes and microgreens.
- Drizzle with olive oil before serving.
