Ingredients

  • 1 pound Italian sausage
  • 1 onion, chopped
  • 3 carrots, sliced
  • 3 celery stalks, sliced
  • 4 garlic cloves, minced
  • 8 cups chicken broth
  • 1 (9-ounce) package refrigerated tortellini
  • 1 cup chopped kale or spinach
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Cook the sausage in a large pot over medium heat until browned. Remove and set aside.
  2. In the same pot, sauté onions, carrots, and celery until tender, about 5 minutes.
  3. Add garlic and cook for 1 minute.
  4. Return sausage to the pot, pour in chicken broth, and season with thyme, salt, and pepper. Bring to a boil.
  5. Reduce heat and simmer for 15 minutes.
  6. Add tortellini and cook according to package instructions, about 3-5 minutes.
  7. Stir in chopped kale or spinach just before serving.
  8. Garnish with fresh parsley and serve hot.

Notes

  • You can substitute spinach for kale for a milder flavor.
  • Cook the tortellini separately if you prefer to prevent over-softening.
  • For a creamier soup, add a splash of heavy cream before serving.
