Ingredients

- 1 pound Italian sausage
- 1 onion, chopped
- 3 carrots, sliced
- 3 celery stalks, sliced
- 4 garlic cloves, minced
- 8 cups chicken broth
- 1 (9-ounce) package refrigerated tortellini
- 1 cup chopped kale or spinach
- 1 teaspoon dried thyme
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Cook the sausage in a large pot over medium heat until browned. Remove and set aside.
- In the same pot, sauté onions, carrots, and celery until tender, about 5 minutes.
- Add garlic and cook for 1 minute.
- Return sausage to the pot, pour in chicken broth, and season with thyme, salt, and pepper. Bring to a boil.
- Reduce heat and simmer for 15 minutes.
- Add tortellini and cook according to package instructions, about 3-5 minutes.
- Stir in chopped kale or spinach just before serving.
- Garnish with fresh parsley and serve hot.
Notes
- You can substitute spinach for kale for a milder flavor.
- Cook the tortellini separately if you prefer to prevent over-softening.
- For a creamier soup, add a splash of heavy cream before serving.
