Ingredients

  • 4 sausage patties (or bacon strips, if preferred)
  • 4 flour tortillas (8-inch size)
  • 1 cup shredded cheese (cheddar or American)
  • Salt and pepper, to taste
  • Optional: hot sauce or salsa for extra flavor

Instructions

  1. Whisk the eggs with a pinch of salt and pepper in a bowl. Scramble the eggs in a nonstick skillet over medium heat until just set. Set aside.
  2. Cook sausage patties in the same skillet until browned and cooked through. Drain excess grease and cut into smaller pieces if desired.
  3. Warm tortillas slightly to make them pliable. Lay a tortilla flat, add scrambled eggs, a sausage patty, and sprinkle with shredded cheese.
  4. Roll the tortilla tightly around the filling, folding in the sides as you go. Repeat for all wraps.
  5. Optionally, toast the wraps in the skillet for a minute on each side for a crispy exterior. Serve immediately.

Notes

  • To make the wraps ahead, cool completely and wrap tightly in foil or plastic wrap. Store in the refrigerator for up to 3 days.
