- 4 large eggs
- 4 sausage patties (or bacon strips, if preferred)
- 4 flour tortillas (8-inch size)
- 1 cup shredded cheese (cheddar or American)
- Salt and pepper, to taste

Instructions
- Whisk the eggs with a pinch of salt and pepper in a bowl. Scramble the eggs in a nonstick skillet over medium heat until just set. Set aside.
- Cook sausage patties in the same skillet until browned and cooked through. Drain excess grease and cut into smaller pieces if desired.
- Warm tortillas slightly to make them pliable. Lay a tortilla flat, add scrambled eggs, a sausage patty, and sprinkle with shredded cheese.
- Roll the tortilla tightly around the filling, folding in the sides as you go. Repeat for all wraps.
- Optionally, toast the wraps in the skillet for a minute on each side for a crispy exterior. Serve immediately.
Notes
- To make the wraps ahead, cool completely and wrap tightly in foil or plastic wrap. Store in the refrigerator for up to 3 days.
- Reheat in the microwave for 1-2 minutes or in the oven for a crispy finish.
- You can customize the ingredients, such as adding avocado, spinach, or hot sauce.
