- 1 pound ground beef or mixture of beef and pork
- 1/2 cup bread crumbs
- 1/4 cup grated Parmesan cheese
- 1/4 cup chopped fresh parsley
- 1 egg
- Salt and pepper to taste
- 4 cups beef or chicken broth
- 1 cup heavy cream
- 2 carrots, sliced
- 2 celery stalks, sliced
- 1 onion, diced
- 2 cloves garlic, minced
- Fresh dill or parsley for garnish
Instructions
- Mix ground meat, bread crumbs, Parmesan, parsley, egg, salt, and pepper in a bowl.
- Form into small meatballs.
- In a large pot, sauté onion, garlic, carrots, and celery until tender.
- Add broth and bring to a simmer.
- Gently add meatballs to the broth and cook until cooked through (~10 minutes).
- Stir in heavy cream and heat through.
- Garnish with fresh dill or parsley before serving.
Notes
- Can use a mix of beef and pork for more flavor.
- Adjust seasoning to taste.
- Serve with crusty bread for a complete meal.
