Ingredients

- 1 pound of chicken or beef, cubed
- 2 cups of chopped carrots
- 2 cups of diced potatoes
- 1 cup of chopped celery
- 1 large onion, diced
- 4 garlic cloves, minced
- 6 cups of chicken or vegetable broth
- 2 tablespoons of olive oil
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Heat olive oil in a large pot over medium heat.
- add the cubed meat and cook until browned.
- Add diced onions and garlic; sauté until fragrant.
- Stir in chopped carrots, potatoes, and celery; cook for 5 minutes.
- Pour in broth, season with salt and pepper, and bring to a boil.
- Reduce heat and simmer for 30-40 minutes until vegetables are tender.
- Garnish with fresh parsley before serving.
Notes
- Adjust seasoning to taste.
- For a thicker soup, blend a portion of the mixture before serving.
