- 1 pound beef stew meat, cubed
- 2 tablespoons Olive oil
- 1 large onion, chopped
- 3 garlic cloves, minced
- 3 carrots, sliced
- 2 celery stalks, sliced
- 2 potatoes, diced
- 6 cups beef broth
- 1 can diced tomatoes (14 oz)
- 1 cup green beans, trimmed
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Heat olive oil in a large pot over medium heat. Add beef cubes and brown on all sides, about 5-7 minutes.
- Add chopped onion and minced garlic; cook until translucent, about 3 minutes.
- Add carrots, celery, and potatoes; cook for 5 minutes.
- Pour in beef broth and diced tomatoes. Bring to a boil, then reduce heat and simmer for 1 hour until beef is tender.
- Add green beans in the last 10 minutes of cooking.
- Season with salt and pepper; garnish with fresh parsley before serving.
