- 200g graham cracker crumbs
- 100g unsalted butter, melted
- 600g cream cheese, softened
- 150g granulated sugar
- 3 large eggs
- 200ml sour cream
- 1 tbsp ground cinnamon
- 1 tsp vanilla extract

Instructions
- Preheat your oven to 175°C (350°F). Mix graham cracker crumbs with melted butter and press into the bottom of a springform pan to form the crust.
- In a large bowl, beat the cream cheese and sugar until smooth. Add eggs one at a time, then mix in sour cream, cinnamon, and vanilla.
- Pour the filling over the crust and bake for 50-60 minutes until set. Let it cool completely in the pan.
- Chill in the refrigerator for at least 4 hours. Before serving, top with caramel sauce and a sprinkle of cinnamon.
