  • 4 large russet potatoes, diced
  • 1 lb smoked sausage, sliced
  • 1 cup shredded cheddar cheese
  • 1/2 cup ranch dressing
  • 1 cup sour cream
  • 1/2 cup chopped green onions
  • 2 cloves garlic, minced
  • 1 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C). Toss diced potatoes with olive oil, salt, and pepper. Spread in a baking dish and bake for 20 minutes.
  2. Sauté sliced smoked sausage in a skillet until browned. Set aside.
  3. Mix ranch dressing, sour cream, minced garlic, and half of the cheddar cheese until smooth.
  4. Layer partially cooked potatoes in the baking dish, then add smoked sausage on top. Pour ranch cheese mixture evenly over the layer. Sprinkle remaining cheese and green onions.
  5. Bake for 25-30 minutes until bubbly and golden. Optional: broil for 2-3 minutes for a crispy top.
