- 1/4 cup chopped chives

- 1 cup bread crumbs

Instructions
- In a large mixing bowl, combine mashed potatoes, cheddar, Parmesan, eggs, chives, salt, and pepper.
- Shape the mixture into small puffs or balls.
- Roll each puff in bread crumbs until coated evenly.
- Heat oil in a deep frying pan over medium-high heat.
- Fry puffs in batches until golden brown and crispy, about 3-4 minutes.
- Drain on paper towels and serve warm with your favorite dipping sauce.
Notes
- For a baked version, place puffs on a baking sheet and bake at 375°F (190°C) for 20-25 minutes until golden.
- You can add cooked bacon or jalapenos for variation.
