Ingredients
Scale
- 3 ripe bananas, mashed
- 1/2 cup granulated sugar
- 1/3 cup vegetable oil or melted butter
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup semi-sweet chocolate chips
Instructions
- Preheat oven to 350°F (175°C) and prepare muffin tin with liners or non-stick spray.
- Mash ripe bananas in a large bowl until smooth. Mix in sugar, oil, eggs, and vanilla until well combined.
- In a separate bowl, whisk together flour, baking soda, and salt. Gradually add dry ingredients to wet mixture, stirring gently until just combined.
- Fold in chocolate chips evenly into the batter. Optionally, sprinkle some on top of the batter in each muffin cup before baking.
- Divide batter among muffin cups, then bake for 18-20 minutes or until a toothpick inserted in the center comes out clean.
- Allow muffins to cool in the pan for 5 minutes, then transfer to a wire rack and cool completely.
Notes
- For extra flavor, add chopped nuts or a dash of cinnamon to the batter.
- Ensure not to overmix to keep the muffins moist and fluffy.
- Use ripe bananas for the best flavor and moisture.
