- 1 pound dried red kidney beans
- 1 large onion, chopped
- 1 green bell pepper, chopped
- 3 celery stalks, chopped
- 3 cloves garlic, minced
- 1 teaspoon thyme
- 2 bay leaves
- 1 teaspoon smoked paprika
- 1/2 teaspoon cayenne pepper
- Salt and black pepper to taste
- 4 cups cooked white rice
- 2 tablespoons vegetable oil
- Chopped green onions for garnish
Instructions
- Sort and rinse the red beans, then soak overnight in water or quick soak with boiling water for 1 hour.
- In a large pot, heat vegetable oil over medium heat. Add onions, bell pepper, celery, and garlic, sauté until tender.
- Add soaked beans, thyme, bay leaves, smoked paprika, cayenne, salt, and pepper. Cover with water and bring to a boil.
- Reduce heat to low, cover, and simmer for 2-3 hours until beans are tender, stirring occasionally and adding water if needed.
- Remove bay leaves. Serve the hearty beans over cooked white rice, garnished with chopped green onions.
Notes
- For extra flavor, add smoked sausage slices during cooking.
- Adjust seasoning to taste for spiciness.
