  • 1 pound dried red kidney beans
  • 1 large onion, chopped
  • 1 green bell pepper, chopped
  • 3 celery stalks, chopped
  • 3 cloves garlic, minced
  • 1 teaspoon thyme
  • 2 bay leaves
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon cayenne pepper
  • Salt and black pepper to taste
  • 4 cups cooked white rice
  • 2 tablespoons vegetable oil
  • Chopped green onions for garnish

Instructions

  1. Sort and rinse the red beans, then soak overnight in water or quick soak with boiling water for 1 hour.
  2. In a large pot, heat vegetable oil over medium heat. Add onions, bell pepper, celery, and garlic, sauté until tender.
  3. Add soaked beans, thyme, bay leaves, smoked paprika, cayenne, salt, and pepper. Cover with water and bring to a boil.
  4. Reduce heat to low, cover, and simmer for 2-3 hours until beans are tender, stirring occasionally and adding water if needed.
  5. Remove bay leaves. Serve the hearty beans over cooked white rice, garnished with chopped green onions.
