Instructions
- In a bowl, combine olive oil, minced garlic, oregano, paprika, salt, and pepper. Rub this marinade evenly over the chicken breasts. Let sit for at least 30 minutes.
- Preheat grill or skillet over medium heat. Cook the marinated chicken until fully cooked, about 6-8 minutes per side. Rest for a few minutes, then slice into strips.
- Chop fresh vegetables: cucumber, tomato, red onion, lettuce.
- Warm pita or flatbreads. Spread feta tzatziki on each, add grilled chicken, vegetables, and herbs. Roll or fold to serve immediately.
Notes
- You can substitute chicken breasts with thighs for juicier results.
- Use whole wheat pita for added fiber and nutrients.
- Leftovers can be stored separately in airtight containers for up to 2 days.
