  • 1/4 cup red onion, finely chopped
  • 2 cloves garlic, minced
  • 2 tbsp olive oil
  • 1 tsp dried oregano
  • 1 tsp paprika
  • Salt and pepper to taste

  • Feta cheese crumbles (optional)
  • Optional: tzatziki sauce for serving

Instructions

  1. Start by dicing the tomatoes, finely chopping the onion, and mincing the garlic. Grate the zucchinis into rice-like texture using a box grater or food processor. Cook rice according to package instructions or prepare pre-cooked rice.
  2. Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the ground beef and cook until browned, about 5-7 minutes, breaking it apart with a spatula. Add minced garlic, oregano, paprika, salt, and pepper. Cook for another 2-3 minutes until fragrant.
  3. While the beef cooks, sauté the grated zucchini in another pan with 1 tablespoon of olive oil, salt, and pepper for about 3-4 minutes until tender.
  4. In a large bowl or individual bowls, layer the cooked rice or zucchini rice, seasoned beef, chopped tomatoes, onions, and feta cheese if desired. Drizzle with olive oil or tzatziki sauce. Garnish with fresh parsley for added flavor and color.
