This recipe combines juicy smashburger patties with melted cheese wrapped in a crispy tortilla, making it an ideal meal for busy weeknights or weekend snacks. Prepare to enjoy a flavorful and satisfying dish in just 20 minutes, perfect for burger lovers and cheese enthusiasts alike.

  • Total Time: 20 minutes
  • Yield: 4 servings

Ingredients

Scale
  • 1 lb ground beef – for that juicy smashburger flavor
  • Salt and pepper – to taste
  • 4 large flour tortillas – choose your preferred size
  • 1 cup shredded cheddar cheese – or a blend of Mexican cheeses
  • 1/2 cup diced onions (optional)
  • 1/2 cup sliced pickles (optional)
  • Cooking oil or butter – for crispiness
  • Sour cream, salsa, or guacamole – for serving

Instructions

  1. Heat a skillet over medium-high heat, add a little oil, and form small balls from the ground beef. Place each ball on the skillet and use a spatula to smash them flat into thin patties. Season with salt and pepper. Cook for about 2-3 minutes per side until golden brown and cooked through.
  2. If adding onions, sauté them in a separate pan until caramelized or just softened, about 3-4 minutes. Set aside. Prepare your pickles and shredded cheese for assembly.
  3. Lay a tortilla flat and sprinkle a layer of shredded cheese over half of it. Add a cooked smashburger patty, some sautéed onions, and pickles if desired. Top with more cheese and fold the tortilla over to seal.
  4. In the same skillet, heat a little oil or butter over medium heat. Place the assembled quesadilla in the skillet and cook for 2-3 minutes until golden brown. Carefully flip and cook the other side for an additional 2-3 minutes until crispy and cheese melts.
  5. Slice your smashburger quesadilla into wedges and serve hot with sour cream, salsa, or guacamole for extra flavor. Pair it with a fresh side salad or some crispy fries for a full meal.

Notes

  • For extra flavor, add jalapeños, lettuce, or tomatoes before folding the quesadilla.
  • Use a nonstick skillet to prevent sticking and ensure easy flip.
  • Adjust the cooking time based on the thickness of your patties for optimal crispiness and doneness.
