Instructions
- Heat a skillet over medium-high heat, add a little oil, and form small balls from the ground beef. Place each ball on the skillet and use a spatula to smash them flat into thin patties. Season with salt and pepper. Cook for about 2-3 minutes per side until golden brown and cooked through.
- If adding onions, sauté them in a separate pan until caramelized or just softened, about 3-4 minutes. Set aside. Prepare your pickles and shredded cheese for assembly.
- Lay a tortilla flat and sprinkle a layer of shredded cheese over half of it. Add a cooked smashburger patty, some sautéed onions, and pickles if desired. Top with more cheese and fold the tortilla over to seal.
- In the same skillet, heat a little oil or butter over medium heat. Place the assembled quesadilla in the skillet and cook for 2-3 minutes until golden brown. Carefully flip and cook the other side for an additional 2-3 minutes until crispy and cheese melts.
- Slice your smashburger quesadilla into wedges and serve hot with sour cream, salsa, or guacamole for extra flavor. Pair it with a fresh side salad or some crispy fries for a full meal.

- For extra flavor, add jalapeños, lettuce, or tomatoes before folding the quesadilla.
